Matcha Banana Bread

Who doesn't love a delicious piece of banana bread with a hot cup of tea?

This delicious ''cake'' is perfect for breakfast, dessert or as a snack.

The matcha balances the taste of the bananas pleasantly and gives it that certain something.

Ingredients

  • 4 overripe bananas (approx. 390 g without peel)
  • 1 ripe banana
  • 140 ml plant drink
  • 100 ml rapeseed oil
  • 70 g agave syrup
  • 380 g flour
  • Matcha
  • 1.5 tsp baking powder
  • 1 pinch of salt

preparation

  1. Preheat oven to 180 °C.
  2. Coat the baking pan thinly with oil or and preferably line it with baking paper
  3. Peel the bananas and mash them into a puree in a bowl.
  4. Then mix the wet ingredients (140 ml plant drink, 100 ml rapeseed oil and 70 g agave syrup) with the banana puree until a relatively homogeneous mass is formed.
  5. Mix the dry ingredients (380 g flour, 1.5 tsp baking powder, 1 pinch of salt, matcha) in a separate bowl.
  6. Add the flour mixture to the wet ingredients and mix well until smooth.
  7. Peel the ripe banana, cut it lengthwise and press it lightly into the dough with the cut side facing upwards.
  8. Bake the matcha banana bread on the middle rack for about 45 - 60 minutes. If the surface of the banana bread becomes too dark, simply cover the pan with aluminum foil halfway through the baking time.
  9. Then you can let the banana bread cool down and take it out of the mold
