Matcha Banana Bread

Ingredients:

  • 3 ripe bananas (crushed)

  • 75 g coconut oil or butter (melted)

  • 100 g cane sugar or coconut blossom sugar

  • 2 eggs (or flaxseed egg for vegan)

  • 200 g flour (wheat or spelt)

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 2 tsp matcha powder

  • 1 pinch of salt

  • Optional: Handful of walnuts, chocolate chips or coconut flakes, dates

Preparation:

  1. Preheat oven to 180 °C (top/bottom heat) .

  2. Mash bananas in a bowl, add oil/butter and sugar, mix.

  3. Stir in the eggs until the mixture is creamy.

  4. In a second bowl, mix flour, baking powder, baking soda, salt, and matcha.

  5. Add the dry ingredients to the wet ingredients and gently fold them in. Do not stir for too long!

  6. Add walnuts or chocolate if desired.

  7. Pour the batter into a greased loaf pan.

  8. Bake for 45–50 minutes , then do a toothpick test.

Tip:

For an extra matcha effect , you can make a matcha glaze (mix icing sugar + some matcha + water and pour over the cooled bread).
