Matcha banana coconut pancakes
Ingredients:
- 1 cup wheat flour
- 1 tbsp matcha powder (I use the culinary grade)
- 2 tsp baking powder
- ¼ tsp salt
- 1 ripe banana, mashed
- 1 egg
- 1 cup milk of your choice
- ¼ cup shredded coconut (unsweetened)
- 1 tsp vanilla extract Toppings (optional): • Banana slices • Coconut flakes • Maple syrup or honey
Preparation:
- Mix the liquid ingredients: In a bowl, combine the egg, milk, vanilla extract, and mashed banana. Mix well until well combined.
- Combine dry and liquid ingredients: Add the dry ingredients (flour, matcha, baking powder, salt) to the banana mixture and gently fold in. Don't overmix—the batter may still be a bit lumpy.
- To make pancakes: Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil. Pour about 1/4 cup of batter into the pan for each pancake. Cook for 2–3 minutes, or until bubbles form, then flip and cook for another 1–2 minutes until golden brown.
- Serving: Stack the pancakes on a plate and serve with banana slices, coconut flakes, maple syrup, or your favorite toppings.
