Matcha chia pudding with coconut and banana
Ingredients:
Preparation:
1. Make the matcha mixture: In a small bowl, stir the matcha powder with 2-3 tablespoons of the coconut milk until smooth and there are no more lumps.
2. Puree the banana: Mash the ripe banana in a separate bowl with a fork until it forms a fine puree.
3. Prepare chia pudding: In a large bowl, mix together the remaining coconut milk, matcha mixture, banana puree, honey or maple syrup and vanilla extract (if using).
4. Add chia seeds: Stir the chia seeds into the mixture so that they are evenly distributed.
5. Chill: Cover the pudding and let it sit in the refrigerator for at least 4 hours or overnight, until the chia seeds have absorbed the liquid and the consistency is thick and pudding-like.
6. Serving: Stir well before serving. Garnish the pudding with coconut flakes and fresh bananas.
