Matcha French Toast

Ingredients:

  • 2 slices of bread (preferably brioche, sourdough or another soft bread)

  • 1 egg

  • 60 ml plant-based milk (e.g. oat or almond milk)

  • 1 tsp matcha powder

  • 1 tsp maple syrup (alternatively: coconut blossom sugar)

  • 1/2 tsp vanilla extract

  • 1 pinch of salt

  • Coconut oil or ghee for frying

Optional topping:

  • Fresh fruit (e.g. banana, kiwi, berries)

  • coconut flakes

  • Other toppings of your choice: nut butter, granola, maple syrup...

Preparation:

  1. Prepare the matcha mixture:
    In a shallow bowl, thoroughly whisk together the egg, plant-based milk, matcha powder, maple syrup, vanilla extract and a pinch of salt until the matcha has completely dissolved.

  2. Soak bread:
    Place the bread slices in the matcha mixture and let them soak for about 30 seconds on each side. The bread should be well moistened, but not soggy.

  3. Sauté:
    Heat a little coconut oil or ghee in a pan. Fry the bread slices in it over medium heat until golden brown on both sides – about 2–3 minutes per side.

  4. Serve:
    Arrange on a plate and top with fresh fruit, coconut flakes or maple syrup as desired.

💚 Tip:

French toast tastes best warm straight from the pan. The combination of fluffy bread, delicate matcha aroma, and fresh toppings is perfect for a special start to the day!
